Taco Salad

This week, RWA/NYC authors are posting our characters' favorite recipes. Today we have Taco Salad, a favorite of Marisol Ruiz's, the heroine of ONE MORE NIGHT by Del Carmen.

 

Marisol Ruiz is the heroine of ONE MORE NIGHT by Del Carmen. It's a second chance for her and her childhood sweetheart Josh. Can they make a go of it despite their match making mommas? All it will take is one more night....

Ingredients

1 block of cream cheese (room temperature)

1 jar of your favorite taco salsa

1/2 shredded lettuce

1 block /bag of your favorite shredded cheddar cheese(s) 

1 bag of big taco / tortilla chips

chopped jalapeños -- optional

chopped onions -- optional

chopped black olives -- optional

Directions:

1) Need round plate with lip

2) spread the cream cheese all over the bottom of the plate

3) pour the salsa and spread over the cream cheese

4) top with the shredded lettuce

5) top with the shredded cheese(s)

6) top with jalapeños, onions and olives (optional)

Put in fridge for half hour before serving with chips on the side.
