RECIPE OF THE DAY: GRANDMA GRAHAM’S COCONUT BREAD

Grandma Graham’s Coconut Bread

Ingredients:

Cinnamon
Nut Meg
1 Coconut (grated)
4 cups Flour
1 ½ cups Sugar
2 tsp Baking Powder or ½ tsp Cake Yeast
1 tsp Salt
1 stick of Butter
1 Egg
1 tsp Vanilla
Milk of Coconut
       NOTE:  Tthere was an on-going debate whether it was acceptable to use canned coconut milk, but if you prefer, it does make a richer cake.


Directions:

1.   Bake in a 350 degree oven.
2.   Line loaf pan with brown paper or parchment paper.
3.   Bake until skewer comes out clean.
